Egg Muffins

Yesterday was a day full of meal prep. Stuffed peppers, Acai bowls, and of course my go-to egg muffins.

​I make these for breakfast most weeks because they’re super easy and they allow me to use up whatever extra veggies I have laying around.

I make them in muffin tins and warm 2 up every morning in the microwave for 45 seconds. This week, I made 10 muffins.

5 large eggs
5 large egg whites
6 slices of turkey bacon (cook this beforehand and cut into small pieces)
2 tbsp fat free feta cheese
.25 c of diced tomatoes8338693.jpg
.25 c of diced onions
1C chopped spinach

Literally mix all of the ingredients in a bowl and spread evenly across a greased muffin pan.​Cook for 10-15 minutes at 400 degrees.

Make sure you use a toothpick to make sure they’re cooked all the way through!

Super fast, ridiculously easy, and extremely healthy. Mornings are always busy so having a pre-made breakfast is a great way to save some time.
