First of all, I apologize for the delay in posts. I have been extremely busy at work this week for numerous reasons and when I get home after the long day… all I want to do is absolutely nothing. It’s been very stressful but hey, it’s Friday, amiright? Also I discovered Cookie Butter at Trader Joe’s and I really urge you NOT to try it, unless you’re OK with eating the entire jar. Man, that stuff was toooooo good.
This past week I made delicious salads for lunch because I wanted to use up the extra stuff in my fridge without grocery shopping. My salad was a mix of Romaine and spinach, shrimp, quinoa, strawberries, chickpeas and sunflower seeds. It was very “summer-y” (even though it’s still 50 degrees outside). I also made some frozen yogurt – I literally froze vanilla yogurt with pineapples and sprinkles in it. It’s a heck of a lot cheaper to buy the big container of Greek yogurt versus the individual ones. Plus when you freeze it it lasts a lot longer.
On to the fun stuff, I have some BIG NEWS! On Monday I’m starting a 6 week Crossfit program. Yep, Crossfit. I have been terrified of Crossfit ever since I learned about it around a year and a half ago. It scares the sh*t out of me, tbh. I came across this 6-week-all-women-intro-program and my first thought was: “now or never.” So I guess it’s now. I also somehow convinced my girlfriend to do it with me (major plus). I’m really excited but also really scared. I truly don’t mind HIIT in a cardio form, but I hate HIIT in weight-lifting form and I know it’s going to be similar. I plan on posting about it weekly along with providing pictures of my progress throughout the program.
Along with the Crossfit program are instructions on how to follow the Paleo diet. For those of you that don’t know, when on the Paleo diet, you’re basically not allowed to eat dairy, legumes or grains. AKA no cheese, milk, bread, beans, rice, etc. The cheese is going to be really hard for me because cottage cheese is my snack of choice. I also can’t eat my Quest bars or drink my Shakeology. Honestly other than those few things it’s not much different from how I eat now. I’m very curious to see how my body reacts to cutting out dairy because that’s something I have never done.
I went grocery shopping today and actually have been meal prepping since I got home (I’m 26 and spend my Friday nights cooking, it’s cool). Grocery shopping and cooking are actually extremely therapeutic for me and after this week, I needed all the therapy I could get. I’ve meal prepped a few not-so-exciting things: hard boiled eggs, asparagus, tilapia. But I also made some Turkey Taco Burgers and Egg Muffins (but with a bacon bottom). I’m going to also make something with my spaghetti squash this week but I need to wait until my avocados ripen a bit. I’ll post pictures and recipes later — when I actually eat the food so you can see how beautiful everything turned out.
