I think I mentioned this previously, but with Crossfit, they suggest you follow the Paleo diet. I’m all about trying new things, new challenges, new ideas… so I was actually pretty excited about this. I’ve obviously heard of Paleo and I’ve looked into it, but every time I’ve done that I’ve thought “I love cheese” or “What about my Quest Bars?” and then I’ve decided “nah, I’m good.”
But Crossfit gave me a reason to test it out and let me tell you — it’s not that bad. Granted, I’m on day 3, but today I didn’t have coffee… and I woke up at 4:30am… and I wasn’t tired. WHAT?! Whoa. I have had a lot of energy since I’ve started Paleo and Crossfit. I’m not sure if you can blame one or the other alone, so we’ll just say it’s the pair.
Anyway, since I have to eat Paleo, I obviously had to meal prep. I found a recipe online for Chicken Taco Burgers, but I adjusted it to turkey burgers (ground chicken is not cheap). I’ve eaten two so far and they’re everything I hoped they would be.
You will need: (for 12 burgers)
- 3 pounds ground turkey breast, 97% lean
- 4 tbsp taco seasoning (I used Old El Pas0)
- 1 large jalapeño, deseeded and chopped
- 1/2 cup fresh chopped cilantro
- 2 tbsp coconut oil
- …..(and a thirsty cat, apparently – please disregard)
I’ve been wrapping my burgers in romaine lettuce hearts and topping with tomato, avocado and onions. Totally up to you how you want to handle that part, but I love me some veggies.
Place your ground turkey in a bowl and mix with taco seasoning, jalapeno and cilantro. Form the mixture into patties. Heat the coconut oil in a large skillet. Once melted, cook the patties on low heat so they cook all the way through. Serve the patties warm with toppings, whatever those may be.
This recipe was super easy and delicious. I wrapped most of mine in tin foil and froze for later use. I’ll definitely be making them again.. I mean, who doesn’t love a good burger?
