The title says it all.
I’ve lost just over 7 pounds since I started eating paleo and doing Crossfit… and I’m fricken stoked about that. I feel like I was at a plateau for awhile and this is finally putting me over that ledge. Of course it’s been a bit of an adjustment but honestly so far, paleo hasn’t been that difficult to stick to. I meal prepped a bunch this weekend, and one thing I made was a paleo pizza. It was amazing. The crust recipe that I found worked perfectly – way better than cauliflower crust (which is another paleo option) – and it was super easy to make. I’ve used it as a flatbread probably 3 or 4 times since Saturday.
The pizza I made turned out absolutely delicious. I had leftover guacamole from a separate meal prep which is where the “sauce” came from. You can buy pre-made guac if you please, but my homemade was simply: avocados, tomatoes, red onion & cilantro.
For the crust:
- 2 tbsp coconut flour
- 4 egg whites
- 3 slices of turkey bacon, cooked and crumbled
- 1 chicken breast, cooked and diced
- 1/4 cup guacamole
- 1/4 cup sliced green bell peppers
- 1/4 cup sliced red onion
Preheat your oven to 400 degrees. Start by whisking together the coconut flour and egg whites. It takes some time, coconut flour is pretty clumpy. Just keep mixing it and eventually it will become creamy. Grease a large skillet with nonstick spray or coconut oil. Once the pan is hot, slowly pour the crust mixture onto the pan.
The thinner you make it the crunchier the crust will be. I use a spatula to spread it across the pan. It will only need to cook for a few minutes. Once it’s sturdy enough to be flipped over, do that verrrrry carefully and let the other side cook for about two minutes.
Once it’s done, place onto a nonstick pan and top with guacamole, chicken, veggies and bacon. Toss it in the oven for about 10 minutes just to get everything all warm and enjoy!
