I did fairly well this week I think. I planned on having my “cheat meal” at State Fair on Thursday. I had a whole list of new, deep fried foods that I wanted to eat. I started with the Red Velvet Milkshake, which was AMAZING. Only problem was.. I haven’t had ice cream or milk like that in MONTHS and it did nothing except give me a killer stomach ache. Super upsetting. I didn’t get to eat my funnel cake fries, or my deep fried old fashioned. Always next year though!
Yesterday I did a 5k inflatable obstacle course with a friend which was a lot of fun! Very different, but it was a good time. I counted that as my workout for the day. Then myself and some friends went out downtown and drank quite a lot. I only ate some eggs and a BLT though, so I’m deeming it as acceptable. I turned down going on a boat today so I could “adult” — LAME. But I know tomorrow I’ll be happy I made that decision.
Part of “adulting” for me is meal prep, of course. I’ve had wonton wrappers in my freezer for months so I finally decided I needed to use those up and made some taco cups!
I decided to use Boca veggie crumbles again for these because I had some in the freezer. You can use beef or ground turkey or even shredded chicken if you’d like.
You will need:
36 wonton wrappers
1 bag of Boca Veggie Crumbles
1 green bell pepper, diced
2 small jalapenos, chopped & seeded
2 tbsp taco seasoning
1 cup salsa
1 cup shredded cheese
Preheat the oven to 400 degrees F. Start with browning the “meat” and mixing in the green peppers and jalapenos. When everything is cooked, mix in the taco seasoning and the salsa. Let it sizzle on the stove for a bit.
While that’s cooking, grease a muffin tin pan (mine had 12). Stagger two won-ton wrappers and place inside of each cup. Place a spoonful of the mixture inside of each tin. Take an additional won-ton and layer it on top of the meat. Then add another spoonful of meat on top.
Place in the oven for about 10 minutes or until the won-tons are crispy. Remove tin from the oven and sprinkle with cheese. Put back in the oven for about 5 minutes or until cheese is melted.
I topped mine with avocado and plain Greek yogurt. Other ideas include additional salsa, olives, jalapenos, etc. Enjoy!
