Healthy Banana Bread

I LOVE banana bread.

So much that I don’t make it too often…. because I eat it all immediately.

I feel less guilty about that when it’s a healthier version, I suppose.

But still  — guilty pleasure. Especially with chocolate chips. Topped with peanut butter. OMG, I could go on all day about it.

But I won’t. Instead, I’ll provide you with the recipe for the most recent version I made.

You will need:

  • 3 VERY RIPE bananas
  • 1 C. sugar substitute (I used Splenda)
  • 1/2 C. unsweetened applesauce
  • 3/4 C. flour
  • 1/2 C. wheat flour
  • 1 1/2 tsp baking soda
  • 1/2 C. chocolate chips

Preheat oven to 350 degrees. Grease a bread pan with non-stick spray.

Blend together banana and sugar. Mix in the rest of the ingredients. Pour into bread pan and bake for about 45 minutes (toothpick test, as times may vary).

Cut into 12 pieces – 2 PP each. Top with peanut butter. (that’s just a suggestion ;))
