Sunday Funday

And by that I mean I FINALLY meal prepped! yahoo!

Unfortunately, they were not recipes that I made up on my own, but they were more exciting than the crockpot chicken I’ve been making the past several weeks.

I had a pretty productive weekend. Friday night I stayed in, finished up my cute little window bench…finally.

That was a bookcase at one point. Just call me Martha Stewart.

I still don’t have a kitchen table, or an outdoor grill, our a treadmill (the list goes on…) but my house is at least cleaned up finally which is a huge stress relief. Thank God, because I can’t handle continuing to eat my stresses.

I had to go borrow money from my mom since I still don’t have my debit card after the numbers got jacked last week. I’ve been DYING for a good Woodman’s spree. I got about half of it today, seeing as I had a limit I needed to make sure to stay under (this is why I never use cash lol). But my haul will last me hopefully two more weeks or so.

Anyway, for breakfast this week I made a spinach, artichoke & feta egg bake from SkinnyTaste.

Spinach, eggs, feta, artichoke, red pepper, parmesean cheese, garlic — YUM. It smelled so good after it came out of the oven that I ate a slice right away, whoops.

I’m also going to make overnight oats a few times this week as well and I’m so excited because it’s been quite some time since I’ve had it.

For my lunches, I made another recipe from Skinnytaste — southwest chicken & sweet potato bake.

I made the sauce from scratch for this one, which was weird, because I had to boil tomatoes? Have you ever boiled a tomato? Me either. It was an odd concept.

I did not take a picture of the final product prior to dividing it up and putting it away – SORRY! But I ate some of this too and it was delicious. Chicken, sweet potatoes, garlic, cumin, tomatoes, peppers, onions & lots of cheese! Yum, cheese.

I did laundry today, ran 4 miles, cleaned the house… but did not work on any projects or cross anything off my list and I am DAMN happy about that. Sometimes, you just need a day off. And today was that day.

Now I’m going to make some popcorn and continue to binge watch 13 Reasons Why. Happy Sunday!
